That's why San Nicola ham  is different from the others, we started long time ago to talk about selection, production control, checking of  critical points and all this was not made to distort tradition but to complete it and improve it in those aspects affected by obsolescence and no more up- to- dated.
To produce such an ham   we hire only the best local professional figures , real artists in selecting the meat,  starting the salting process, drying,  pre-seasoning, seasoning, production controlling during the whole processing and up to the final stage  or pre-marketing .We take good care of our ham in all production stages  , only  this  way it becomes  different: another thing.
