Parma good to eat: prosciutto, parmigiano and more
Departure from the accomodation in Parma at 8.30 am
Your trip to discover the traditional delicacies of Parma will begin by reaching the hills behind the city in order to get to know up close the places where the two excellencies for which our territory is famous all around the world are created. Our first stop will be the visit a cheese factory where the cheese maker will explain to you all the processing of the milk, what transforms it into Parmigiano Reggiano and where you will discover how this cheese, without any chemical additive, can be preserved for years also improving its quality. You will learn to distinguish the different ageings thanks to the tasting led by an expert, a true sensory experience.
The second stop will be the visit of a ham factory where we will see all the steps of the processing of the meat and we will taste the final product, result of a careful and attentive curing. The tour will continue by having lunch in a typical restaurant or in a wine cellar where you will enjoy some of the most famous local dishes, such as the tortelli d’erbetta and you will taste the best local wines such as Lambrusco and Malvasia. After lunch, you will make a quick stop at the castel of Torrechiara, impressive building located in a truly panoramic place, ideal for the pictures.
Return to the accomodation in Parma at 2.30 pm
If you wish, during the afternoon, you will be able to discover another delicacy of our region, the balsamic vinegar. We will visit a traditional vinegar factory, an “acetaia”, in the region of Reggio Emilia or Modena, where an expert will explain to us how the famous black gold is produced, and where we will discover and taste the strangest combinations.
